Tuna salad with pasta

I'm back from my short vacation and I'm looking forward for my first triathlon. This weekend I am going to participate in the Triathlon Challenge Mamaia so this week is carbo-loading week this means a lot of noodles. My goal is to finish in the top 10 or finish in about a half hour.

Yesterday I made tuna salad with noodles a salad that I wanted to try a long time ago. I had these ingredients:
  • one onion
  • one tomato
  • one red pepper
  • some cheese
  • a can of tuna
  • a can of corn (it was a bit too much)
  • olives
It is very easy to make this salad, just cook the pasta, chop the veggies and mix everything. Season with some  lemon juice and olive oil, you can use some chilly also.

Summer salads

I love summer because there are a lot of fresh vegetables at the market. This week I made two kind of salads, one with a yogurt dressing and one with lime juice.
I use the yogurt dressing for every salad that doesn't involve fish. For example in this salad I had some left over grilled chicken. You can use every vegetable you like, I chopped up some cabbage, cucumbers, carrots,  tomatoes and onions. I like to make my own dressings, I usually use one big cup of yogurt and some herbs and spices like parsley, oregano, basil and salt (maybe some paprika for color). I chopped up a few leaves of mint to but I didn't really like it.

I like to make my own croutons also. I toast the bread and cut it up in small cubes. It has a really good taste when you rub some garlic on the bread before you cut it up.

The fish salads are easier to make because you just chop up the veggies, put the fish on top and squeeze some lime juice on it. Then throw on some croutons and some herbs (basil, parsley) and enjoy :)

A new pot in my kitchen

In the new pot I've planted chili seeds :D
As you can see, in the big pot there is something green, I think it is the basil but I'm not a 100% sure, but I will know in few days:
Since I took this picture there are more small plants in the pot and there is one more pot were I will grow some salads for sandwiches and decoration.

Another simple salad

I had some veggies left the day before and I love fish. So I made one of my favorite salads. I chopped up the cabbage, the carrot,  the tomato, the  radish and the onion. I bought a canned fish (fish in oil) and I've put it on top. I sprinklered some salt on the salad an pored lemon juice. Here is how the delicious salad looked like:

I love spring

One more reason to love spring is that you can buy fresh vegetables. Last night I went to the market and I bought a cabbage, some carrots,  tomatoes and radish. I chopped them, I've put some salt, vinegar and olive oil on top and the delicious salad was ready.
